Simplicity is my specialty *recipes*

I post a lot of our meals on Insta/FB & get so many comments/messages asking for the recipe SO the easiest way to give all of you the down low on a couple of those - is via blog post. I have received so much feedback from you guys on the "better than sex cake" and even the apple cider float. I'm so glad you loved it! If you haven't tried either of those, go to your nearest grocery store right this second and get the ingredients. I PROMISE you will thank me.  I feel like we keep everything needed for those, on hand. Haha! [sad but true] So, let's get started! As my title states: SIMPLICITY IS MY SPECIALTY. We go for easy, kid friendly (mostly) meals that I hope you try and love as much as we do!

Hot sausage dip

What you'll need:
1 lb. Hot italian sausage
1 can of Hot Rotel
8 oz. Cream cheese
4 oz. Velveeta cheese (optional)

Directions:
Brown sausage in a skillet
Put Rotel, cream cheese & sausage in crockpot (Velveeta also - if you choose to add it. We prefer to for added cheesiness)
Turn on low until melted
Turn down to "keep warm" and enjoy dipping!
We like to use Tostitos OR Doritos. Yum

How much easier does it get?! This appetizer is our newest go-to on weekends while watching football! 



Swiss turkey sliders

What you'll need:
12 Kings Hawaiian sweet rolls
1/2 lb. Deli turkey (or any kind you would like & you can also substitute the turkey for your favorite lunch meat, if you aren't a turkey fan!)
3-4 slices of SWISS CHEESE - we also love to use Havarti cheese! Again, you can sub in any cheese you like, or none at all.
Poppy seed dressing 

Directions:
Cut rolls in halves
Add the amount of *meat* you would like on each
Add cheese. I usually break the cheese into sections of 4 and do one piece on each roll
Drizzle poppy seed dressing on top and bake on 350 until cheese is melted

I told you, simplicity. 

Hot italian sausage tortellini

What you'll need:
1 package of four cheese Tortellini. I usually find ours in the refrigerated section of the store
2 jars of spaghetti sauce - or if you're like me, your own special homemade spaghetti sauce
1 lb. hot italian sausage. You can do the mild, or even regular if you don't like spicy!
Parmesan cheese to top

Directions:
Brown italian sausage in a LARGE skillet. I use one big/deep enough to add everything to once meat is done browning
Add tortellini to boiling water with a teaspoon olive oil
After sausage is finished browning, add in your sauce and reduce to a simmer
Once the tortellini is soft, add it to the sauce/sausage and continue to cook on low-medium heat for approximately 15 minutes
Bake your favorite garlic bread or breadsticks, garnish with some parmesan cheese and there you have it!

These 3 recipes are far from fancy, so if that's what you're looking for...my blog isn't the place for you. We try to stick with easy/delicious/time efficient meals that the kids can enjoy with us.
